I am winging this recipe here. I have had these at a friend's home and I have made them a handful of times and they are simply delicious. You may omit the prosciutto if you don't do meat or you may substitute other things. I have done this with other veggies on hand, for instance, broccoli. I just eyeball the amounts but will try to be more precise. The recipe here will make about 15 appetizers, if you have 15 stalks of asparagus.
1 pack fillo dough (squares)
asparagus, cut off bottom inch
1/2 pound prosciutto
About 15 shavings of parmesan cheese
1/2 cube melted butter
Preheat oven to 350 degrees
Melt butter for brushing on fillo dough
Roll small piece of prosciutto around asparagus stalk
Place on buttered fillo square (triangles are OK too)
Add a piece of parmesan
Asparagas will be longer than dough
Wrap dough around asparagus/prosciutto and parm
Put seam down on greased cookie (Pam) sheet
Bake for about 10 minutes in preheated oven @ 350 degrees
Done when light brown and flaky. This may be made with several variations. Use your imagination.

We used to serve the "lite" version of this in France as a starter.
We'd simply take the asparagus and the parma ham...wrap the ham or whatever around the asparagus...and serve with some fresh vinaigrette.
Lovely on the plate too!
